In studies of people who have both EoE and celiac disease, about one-third experienced fewer EoE symptoms after going gluten-free. This diet also seems to help some children with both conditions.
For people with EoE who don't have celiac disease, gluten causing problems appears to be extremely rare. However, wheat (which contains gluten) is one of the most common EoE triggers. So if a gluten-free diet helps, it might actually be the wheat elimination that's making the difference, not necessarily the gluten itself.
